1 onion sliced thin and separated<br>
4 ounces soy cheese slices (your favorite variety)<br>
2 Tbls &quot;Earth Balance&quot; soy spread<br>
3 Tbls, more or less, soy milk<br>
1/2 cup water<br>

<u>Preparation<br>
</u><br>
Layer the potatoes and onion in a stove top pan, cover with water and simmer
with lid on until potatoes are fork soft. Drain water. Add cheese in between
potato/onion layers, 'Earth Balance' and soymilk. Replace the lid and continue
to simmer until the cheese is melted.<br>
