Nancy's Mom's Stove Top Scalloped Potatoes
Ingredients
2 potatoes (skins on) washed and thinly sliced
1 onion sliced thin and separated
4 ounces soy cheese slices (your favorite variety)
2 Tbls "Earth Balance" soy spread
3 Tbls, more or less, soy milk
1/2 cup water
Preparation
Layer the potatoes and onion in a stove top pan, cover with water and simmer
with lid on until potatoes are fork soft. Drain water. Add cheese in between
potato/onion layers, 'Earth Balance' and soymilk. Replace the lid and continue
to simmer until the cheese is melted.
