Dirty Rice

Ingredients
1 1/2
Cups cooked white rice
1/2 Cup diced onion
1/2 Cup diced green bell
pepper
1/2 Cup chopped portabella mushrooms
1/4 Cup water
1 Tbls
vegetable bouillon paste
1 Tbls dried parsley
2 tsp minced garlic
2 tsp
olive oil
1 tsp Cajun spice blend
Preparation
Prepare
the rice according to instructions in advance and set aside.
Sauté the
onion, bell pepper and garlic in olive oil until soft, add the mushrooms and
parsley. Cook uncovered until the mixture dries slightly and the flavors blend.
Now add the cooked rice, water and bouillon. Cook an additional 10 minutes or
until medium dry, this is "Dirty Rice" after all.
Garnish with fresh
green onion.
