Curried Cabbage Rolls with Tomato and Mushroom

     Excerpt from: A Vegetarian Cooks’ Book, The Green Cutting Board Press, 2004




3 Tbls curry paste*

1 medium onion, diced

1 Tbls fresh ginger, diced

2 cloves of garlic, diced

4 Tbls vegetable oil

2 medium tomatoes cut in to eights

1 cup cauliflower

4 ounces button mushrooms, sliced

4 fresh cabbage leaves

3/4  cup tomato sauce

3 cups cooked rice

1 cinnamon stick, broken

1 pinch raw sugar

1 pinch sea salt

1 grind of black pepper


*Curry paste


2 Tbls ground coriander

2 Tbls ground cumin

1/2 tsp chili powder

2 tsp ground turmeric

1 Tbls vinegar

1 Tbls hot water




Step 0ne, “We taste the sense of each other”, take one step forward”

            Mix curry spices with vinegar to make a paste, set aside.


Step two, “And feel a child’s embarrassment when surrounded by the company of adults”

            Heat a heavy pot to medium and add the vegetable oil, Sauté the onion, garlic and ginger until golden. Take another step.


Step three, “Mix the heat of passion with the self-realization of family.”  Take a step forward.         

            Add the curry spice to the onion, garlic and ginger, stirring constantly.


Step four, “Together, envision, purity and goodness in all men. Again, step together”

            Prepare rice with a cinnamon stick, set aside.


Step five, ”Take another step; add the fruit of life to your union and season to taste.”

            Add the tomato sections and cauliflower to the onion mixture and simmer for 20 minutes.


Step six, “Be at home together and satisfy each other as friends”

            Sauté the mushrooms and add to one half the rice. Step again


Step seven, “Develop your home as if you two were one.” Another step.

              Simmer cabbage leaves in steamed water until pliant and drain, set aside.


Step eight, “Wrap into the arms of each others security and step forward.

               Divide the rice and mushrooms into 4 portions and wrap into the cabbage leaves in the fashion of spring rolls.


Step nine, “Sequester two and be as one,” Take one step.

               Place the cabbage wraps into the tomato sauce in an oven ready pan and cook covered in a 375º oven for 40 minutes.


Step ten,  “Enter the Universe and reside together, forever. Take the final step.

                Serve over cinnamon rice with warm ‘Nan’ bread*
